• In addition to the preparation requirements described in Item No. 1184, these boneless top sirloin steaks shall be prepared only from the gluteus medius muscle.

• Place frozen product in a 33 – 40° F cooler for 12– 24 hours or until soft to the touch.

• Store in a freezer for up to 350 days after the packed date or 10 days after the slacked date at 27 - 33°F. 

• Increase Palatability w/o Increasing Cost (i.e., Palatability = Tenderness; Juiciness; and Flavor)
